‘yummy vegan burgers’
To be honest we love eating burgers, and it has been meatless burgers for a very long time already. But now we took it to the next level. For our yoga retreats last year we developed our own beetroot burger.
Good food always plays an important role at the yoga retreats and we enjoy the planning and preparation of the menus very much. We decided that it was time to make a really nice plant-based burger. And it turned out to be a great success.
Since then we have been asked to share the recipe many times and finally I’m sitting here to write this blog post for you. Today we had another round of fine-tuning the recipe and some more testing which we did with great enthusiasm. How wonderful that part of our job is to make delicious food and eat it.
Of course everyone has their own favorites for what goes on a burger besides the patty. Boris prefers mayonnaise, fried onions and tomatoes on his burgers. But here in Portugal we could not find a vegan mayonnaise at our local supermarkets. We literally checked all of them. This was the sign for us to start making our own mayonnaise. It looks super easy at the online tutorials. But every time we tried to do the exact same thing, it failed. Since there is no other option we keep trying and we are getting better at it. Our recipe for vegan mayonnaise will follow soon.
These beetroot burgers are super yummy and easy to prepare. You can quickly make a lot of them as you comfortably bake them in the oven. They are crunchy at the outside, soft and full of flavor at the inside. Of course you can add whatever spices or herbs you like. You could also use carrots instead of beetroot, or a bit of both. And once you have the patties, there are endless variations with toppings to build your own delicious burger. You can use lettuce, tomato, cucumber, pickle, onions, ketchup, mustard and of course mayonnaise.
Here is the recipe for 8 patties:
- 200 g Vegan minced meat (raw)*
- 200 g Beetroot (raw)
- 75 g Onion
- 60 g Black Beans (cooked)
- 60 g Oatmeal
- 30 g Flour
- 2 Cloves of Garlic
- 2 tbsp Peanut butter
- 2 tsp Thyme
- Salt & Pepper
- Finely chop onion and garlic
- Grate raw beetroot
- Mix all ingredients until a sticky, smooth dough forms
- Shape 8 patties, it’s important to make them flat
- Place patties on baking tray with baking foil
- Oven preheated 180°C
- Bake for 25 – 35 minutes (depends on your oven)
- Build your burger and enjoy!
*there are different versions of vegan minced meat. For this recipe the “raw” version works best. For example: Garden Gourmet or Naturli or the one they have at the Portuguese Lidl
